An intermediate cook like myself probably cannot create a Caviar "Egg Roll" by Wylie Dufresne or the Hen's Egg "Guy Legay" by Yves Camdeborde -- their culinary innovation is mind blowing.
However, Passard's Eggs Sunny Side Inside or Eric Ripert's Quail's Egg Carbonara Nest give a contemporary twist to some old favorites, and although my versions didn't come out perfectly, they looked and tasted pretty darn good.
Wylie Dufresne of wd-50 fame delivers a riff on the perfect poached-egg texture where the white is "like junket" and the yellow is "egg-yolk fudge." That state is achieved by cooking eggs in 64 degree Celsius (140 F) water for 55 minutes, plus or minus 10 minutes. There is an incredible picture of this perfectly poached egg in this book.
The images in this book are absolutely superb; you simply have to admire the genius of the chefs who created the dishes and the genius of the photographer and the printers who put them on the page.
The text is peppered with facts about eggs, and some very interesting cultural notes. For example, Carlos Fuentes, "Sex without sin is like an egg without salt," and Margaret Thatcher, "It may be the cock that crows but it's the hen that lays the eggs."
The same team produced POTATO, Uncooked and Vegetables by 40 Great French Chefs. "Egg" is one of the best of the collection.Robert C. Ross2008

I read this book in the early 90's. Ted Morter, D.C. was way ahead of his time when he released this book to the public. Unfortunately, good health is a person's choice and most people will take very little time to make inquiry into the matter. Also, although this book is reasonable and substantiated from a physiological standpoint, one has to break through the idolatry that exists where medical cures are concerned (i.e. antacids as a cure for stomach ills, argggh!).
I loved Dr. Morters explanation of the digestive process and the pH of each phase from salivation to stomach to duodenum. It is necessary to understand all this to understand what lengths our bodies will go to in order to "save the whole man". The body operates in its wisdom under dire circumstances, but we have a choice and an opportunity to get out of survival mode into health. And the answer is so simple and the logic impeccable.
Cancer and other disease thrive in an acidic environment within the body. Each food we eat leaves a residue of acid or alkalai in our system. Our body will do crazy things to counteract the acid-ash residue left from the SAD diet we are used to (Std. American Diet). Our body will pull calcium from the bones even to neutralize the acid in the system. Drinking more homogenized milk only aggravates the acidity.
Dr. Morter runs under the legs of the medical researchers and unlocks the mysteries...a simple answer to a plaguing problem. Now, ten years after I read the book, researchers are catching up to this book.
It's your health and your choice. If you won't invest the effort to read a little book and see if it compels you to make some basic adjustments, then you deserve the inevitable: poor health and misery---perhaps early exit. This book is great and it changed my life. Too bad it's out of print. It's a CLASSIC! I think that you could find it as a used book even. I still have my copy and don't lend it to anyone. I was truly suprised by this book. Working in the customer relations industry now, I can truly relate to Debra Ginsberg's incredibly accurate depictions of the the public customer.
This book was an incredibly fast read, as Ginsberg's candidly witty writing style jumps out at you and brings you right into the stories with her. Sometimes, I could clearly see myself sitting at one of the tables in her restaurant, just taking in the scene (I hope I wasn't at "Table 50").
The book chronologically takes you through her career as a waitress. Through her wonderful stories, you get to see her develop as a waitress, and more importantly, mature as a person. Over her twenty-year span of waitressing, you get to live through her struggles, financial woes, and life awakenings. It is one truly remarkable ride.
In essence, Waiting is a nice readable memior that hits close to home to everybody on a certain level. It is extremely well written, and the humorous, colorful tones make the flow incredibly smooth. This book is worth reading for the mere fact that it will open your eyes and make you reflect upon your own attitudes when it comes to dining out. Ginsberg wrote a cogent book about a life story that was a real pleasure to read. Waiting will not disappoint.

Martha Stewart's Cooking School: Lessons and Recipes for the Home Cook is an indispensable cooking guide for beginners through mid-level cooks. By mid-level, I am referring to anyone who cooks but is not adept at the various cooking techniques or one with a firm understanding of how and what tools to use in the kitchen.
As a former caterer and chef, I see that many people lack basic cooking skills. This book does a fantastic job of teaching the skill--Stewart provides clear instructions and the accompanying photographs makes the job of learning how to cook seem simple. (And cooking is fairly simple...you just need to practice--and get good guidance!)
The book is stunning in its layout and with impeccable photography throughout. The photographs alone would entice even the most reluctant beginner to jump in and learn to cook!
Cooking School begins with the basics--what cooking supplies to stock in your kitchen. Stewart believes in keeping things simple and she lists the basic equipment to do the job. Also included are knife sharpening tips and much more. Here again, the photos assist in the show and tell method of this book.
The remainder of the book is divided as follows:
* Stocks and dips
* Eggs
* Meat, fish and poultry
* Vegetables
* Pasta
* Dried beans and grains
* Desserts
Each section provides cooking techniques and recipes, many of which are classics.
This is a wonderful book to buy yourself or anyone who wants to learn to cook--or to cook better. I bought a copy for my niece as a housewarming present!

I am a huge fan of Garden of Life products. I take the the Perfect Food super green supplements everyday and I attribute many positive health benefits directly to them. Because of my happiness with their other products I thought I would give this one a try. Wow that was a big mistake! within a few hours of taking just one of these as directed, I had the worst heartburn I have ever had in my entire life. I was then up all night as my body to put it politely rejected this and everything else it contained... I was basically out of commission until these "enzymes" had completely been flushed out, and with them went what I can only imagine were many of the natural enzymes my body already had. The most notable side effect is that though I have always been very mildy lactose intolerant(I can eat cheese, cooked dairy, cottage cheese, yogurt, cup or less of milk at a time) I am now unable to consume even the smallest amount of any dairy product without having hours of stomach cramps(which I never used to have). Im sure there are some other side effects I havent noticed, and im guessing as time goes on I will once again be able to eat dairy and everything else will be back to normal, but I would STRONGLY suggest you use extreme caution. Though this may be an isolated event specific to me and my body, or some kind of allergic reaction, if it happened to me it can most definitely happen to you.
I will continue to take my other Garden of Life products, and search out other new supplements. but oh man was this a bad idea. additionally I have the feeling amazon wont accept a return on this, so I am out $30...
